Vegan Blueberry Muffins




Sometimes you just want a breakfast you can grab and go. But it can be so hard finding one that is not full of sugar, and gives you a balance of protein, fats and carbs to keep you going through the morning.


These blueberry protein muffins are perfect as you can make a batch at the weekend to have ready for those busy mornings through the week, whilst still letting you have a nutritious breakfast.


They're easy to portion due to their size, so you can grab a couple for breakfast or one for a snack and have a healthy option ready to go.  The Very Berry flavour FitChick vegan protein powder gives these a really nice flavour and satisfies the sweet breakfast craving without the sugar.


Servings 12 muffins    Calories 180 kcal


Ingredients 220 g mashed banana 2 large 120 g FitChick Very Berry Vegan Protein Powder 50 g peanut butter 120 g oats 2 eggs 70 g unsweetened apple sauce* 150 ml almond milk 100 g blueberries or other berries

Instructions


Preheat the oven to 185c


Mix the banana and the peanut butter (top tip: microwave for 5 minutes to make soft and easier to mash/mix) then add everything else (except the blueberries) and mix.

Stir through the blueberries and then spoon into 10-12 cupcake cases.

Bake for 15 minutes.
